Cupcake Recipe
Don't you just hate it when you got a lovely recipe, head to the grocery store to just to find out the ingredients you need are neither on the shelves nor available? Well that happened to my sis and I! Remember I mentioned in an earlier post about winning some cupcake recipe from Taylor and Lindsay giveaway? Well, I didn't manage to find the flaxseed, cornmeal, almond meal or cayenne! So what do we do when the wedding is just tomorrow! We think out of the box and modified the recipe and you know what, it turned out tasting really great so we thought we would share this recipe with you!
What do you need?
To make 18 - 20 cupcake
2 1/2 cups of all purpose flour
1 cup of caster sugar
3 eggs
1 1/2 bar of unsalted butter
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
1 tsp almond extract
1 tsp ground cinnamon
2 cups of cocoa powder
1 bottle of whipped cream
almond bits ( Optional* - If you like a bit of crunch add for texture )
1/2 cup of milk or soy milk
food colouring ( for the frosting. optional + choice of colour is up to you )
Preheat oven to 350 Fahrenheit or 180 Celsius
Beat the 1 bar of butter to 1 cup of caster sugar till light and creamy
[ add eggs one at a time, beat well after each addition ( use 3 eggs. inc the yolk )]
Add one tsp of vanilla extract, beat till well combined
Sift the flour and fold in alternately with 1/2 a cup of milk, mix well till smooth.
In another bowl : mix
the chopped almond + cocoa powder + baking soda + baking powder + salt + ground cinnamon
Add the dry to the wet mixture and stir well.
You may now fill the cups with the mixture and bake them for approx 15-25mins until a toothpick in the center comes out clean.
For the frosting
Beat the 1 bar of butter to 1 1/2 cup of caster sugar till light and creamy
Fold in the whipped cream and add a drop of your choice of food colour and mix well.
Important!
Once the cupcakes are out of the oven, wait for it to cool before topping the icing or it will melt!
And remember to leave it in the fridge for about an hour for the icing to harden before you take a bite! :)
